Verdi, Verdi e Più Verdi (Greens, Greens and More Greens)

greens blogGreens are everywhere in Italy, and I’m a big, big fan of greens. Packed with healthy stuff, such as vitamins, minerals and antioxidants, greens are a winner – from chickory to spinach to Swiss chard.

Since I’m also a big fan of all things simple, here’s a way to prepare virtually any type of greens – Italian style – in 5 easy steps:

  1. Blanch greens in boiling water for about 2 minutes or so.
  2. Place greens in a colander and drain well.
  3. Heat 2-3 cloves of minced garlic in 2-3 Tablespoons of olive oil (adjust amounts according to the amount of greens).
  4. Add the drained greens and simmer for 3-4 minutes.
  5. Add sea salt and pepper to taste, plus any herbs you might like.
