It’s July, it’s summertime, it’s hot … and I love it! Slow, hot days are followed by long, cool evenings – and both are filled with good friends, epic barbecues and an abundance of vegetables from the garden.
This year I was sure to plant plenty of cucumbers! I’m crazy for the slender, twisted Italian variety that are firm and flavorful – great for making simple cucumber salads and ideal in green smoothies.
Of course there are a plethora of ways to make homemade green smoothies, but if you have an abundance of cucumbers this summer, here’s one of my favorite, simple recipes for a refreshing, healthy smoothie to enjoy on a hot day:
Green Summer Smoothie: Cucumber with Mint, Lemon and Orange
- 2-3 medium peeled cucumbers (preferably organic or straight from the garden)
- Juice from one lemon
- Juice from one orange
- Leaves from several springs of fresh spearmint
- 1 cup ice
- 1-2 tablespoons chia seeds (You won’t even notice the chia seeds and they add healthy protein and fiber to the smoothie.)
- A sprinkle of organic powdered stevia or 2-3 fresh stevia leaves
Place all ingredients in a blender and blend on high until smooth and a bit frothy. If needed add a bit of water to get the mix started, but add sparingly so the smoothie doesn’t become diluted.
Variation: Add fresh ginger or fresh basil instead of the mint leaves.
